There are two kinds of New Year's Eve drinks: the ones improvised in a panic at 11:50 pm – and the ones you planned ahead. The Pink Lady belongs firmly in the second category. Pink like your first resolution ("more calm"), sparkling like the countdown, and pretty enough to shine in every midnight photo.

The base is our most unusual gin: Madame Geneva Gin Rouge – the first and only gin made from 46 aromatic botanicals and a harmonious measure of red wine. A gin with presence, complex and distinguished – exactly right for the last night of the year. Grenadine brings colour and sweetness, lemon the freshness, tonic the sparkle.

  1. Shake gin rouge, grenadine and lemon juice briefly and hard with ice.
  2. Strain into a chilled glass – a coupe for elegance, a highball with ice for thirst.
  3. Top with tonic water, lift gently once – ready for the midnight toast.

New Year's Eve stage management: keeping the kitchen empty

Pre-mix the shake base (gin rouge, grenadine, lemon at 2:1:1) in the afternoon and keep it chilled. At midnight, just strain, top with tonic, toast. For 8 glasses: 32 cl gin rouge, 16 cl grenadine, 16 cl lemon juice.

Is this the classic Pink Lady from the bar books?

The historic Pink Lady (circa 1911, named after a Broadway musical) is shaken with gin, grenadine, lemon and egg white. Our version swaps the egg white for tonic – lighter, fizzier, and far more practical when many glasses need filling at once.

Which grenadine should I use?

One with real pomegranate – it brings fine acidity along with sweetness. Imitation syrups make the drink overly sweet; if that's what you have, use just 1.5 cl.

Can I make a non-alcoholic Pink Lady?

As a "Pink Lady Zero": 2 cl grenadine, 2 cl lemon juice, tonic – and let a few juniper berries infuse in the glass instead of gin. Looks just as good in the midnight photo.
